Tokaji Aszu Perhaps the finest wine from Hungary, but certainly the oldest and most famous dessert wine in the world. Tokaji Aszu is produced only in the very best years. The Hungarian word "Aszu" means "candied." It refers to the high-sugar grapes infected with Botrytis Cinerea, which are harvested by hand, grape by grape. These grapes are then added to 136 liters of dry base wine. Depending on the quantity of Aszu grapes, the wine is given its puttonyos. A harvest basket is one puttonyo (20-25 kg). To make a Tokaji Aszu 3 puttonyos, the equivalent of 3 puttonyos (baskets) are added to the dry base wine. The Aszu 3 puttonyos must contain at least 60 grams of residual sugar, the 4 puttonyos at least 90 grams, 5 puttonyos 120 grams and the 6 puttonyos at least 150 grams of residual sugar. This Tokaji Aszu 5 puttonyos has a spicy and concentrated acidity that adds freshness and counterbalances its sweetness. It features notes of dried tropical fruit alongside walnut and almond.
